Life has been crazy. Absolute chaos.
We moved from our on campus town house, to my parents, to our house that we bought in October.
While moving in to our house, I was super sick. I ended up getting worse over time, not better. I got help, and was rediagnosed celiac. Again. Second times the charm right? While figuring out that diagnoses again, I was working in retail. I was under so much stress that I could not heal.
Then I got a dream job. Assistant Toddler Teacher. Guys! I work with one and a half year olds! My heart is so full, every single day. The way they run to me when I get in the class is everything I needed. The hardest part of my job is when they move up to the next class. My Monday through Friday routine gets switched up and I no longer get to watch them grow!
I was not mentally prepared for my first move up. Monday is the second move up and I’m still not prepared.
Life has definitely calmed down, finally. It’s not without drama, and issues. But it is so worth living.
Let’s just start off with, I’m obsessed with all things chicken, bacon, and ranch. When I ran across this recipe, I knew I had to try it! It’s just chicken, bacon, ranch, and cheese! All of my favorites!
I found it on the Pinning mama‘s site! Of course, I had to change it up just a little because I’m me. Hubs and I like our cheese, what can I say!
So here’s what I did!
- 5 chicken breasts (they were smaller)
- 2 Tbs ranch
- 6-8 pieces of bacon (enough to cover chicken)
- Cheese (no measurement because I just dumped it on!)
- Onion and garlic powder
- Lay chicken in a baking dish, sprinkle onion and garlic powder on top.
- Cover with ranch dressing.
- Cover with bacon!
- Bake in oven at 400 degrees for 30-35 minutes (or until no longer pink).
- Cover with all the cheese you want! I’m pretty sure I did about a two and a half cups.
- Bake for 3-6 minutes til cheese is melted.
- Serve with with broccoli.
Seriously, this was such a hit in my house! So thankful I stumbled upon this recipe! Hubs even went for seconds (which, doesn’t usually happen!) I made the dish earlier in the day before I got busy and put it in the fridge. All I had to do was pull it out and put it in the oven. Was so quick, and easy! It’s an overall win-win! It’s a quick and easy low carb, keto meal, that is so filling!

So honestly, the last few days have been so crazy!
My husband and I live an hour from where we grew up. We moved for his schooling, back in August. It was a crazy change but we both appreciated being alone for the start of our marriage.
Family and friends would come up on weekends, or we would go back down. Either way, we were still pretty involved with everyone still.
This past weekend, we spent almost a week down there. It’s making me miss my home town so much. Where we are now is so small, and a drive to a lot of things. I miss the convenience of what we had before we moved.
I’m slowly looking at houses online, which is both exciting and terrifying at the same time! Who knew?
I’m also leaving my job, which can’t come soon enough. I’m just ready for a change, and growth, somewhere else.

Burger salad. I’m not sure what else to even call it, besides burger salad. So simple, but so good.
- Two burger patties
- Cup or two of spinach
- Green goddess dressing
- Avocado mayo
- Low sugar ketchup
That’s it! It is so simple, but so filling and so delicious. You can change it up, add more toppings like pickles, tomatoes, mustard, or take some out. It can be changed to fit any want. I now want this all the time! I mean, I am obsessed with the green goddess salad from Panera still. I think I will always be obsessed, sorry not sorry. Maybe I’m just obsessed with salads in general.

I did a rapid pickup, because I love how easy it is to customize and get a general idea of carb content. I fully intended to pick up my food and go home, yet the weather was just too nice today!
But we all know the one incredibly hard challenge with low carb and keto food at Panera… the dreaded baguette!
I’m not even a huge baguette person. I used to give it to my mom, or my husband, every time we went, but now it’s all I want. I love the option of no side, keeps cravings at bay for a while.
